Healthy pesto pasta

Ingredients:

Hello everyone hope you are keeping safe and well. This week I wanted to try out some heathy Dinner (Tea time) recipes and made this one up. Popped it into MyFitnessPal and it came under 600kcals and was super filling.

100g penne pasta

2 tsp Green pesto

Dried parsley

4 x Cherry tomatoes

1 x courgette

1/4 garlic clove

20g red onion

20g cheese (I used Red Leicester)

Method:

1. Chop your courgette into circle piece and place under the grill while the pasta cooks. Keep turning every now and then.

2. Cook your pasta according to instruction in boiled water.

3. Once drained add half of the chopped courgette to the pasta. Add the onion, garlic and cherry tomatoes with a tsp of green pesto. Cook on a medium heat while you prepare more sauce.

4. Add the other half of the courgette and a tsp of green pesto and whiz up in the food processor. Add a little pasta water if needs be to help break up the courgette.Add to your pasta dish along with your cheese and sprinkle a little dried parsley over the top and voila! Ready to serve.

Let me know if you give it a go. I’m sure you can add more veg or try a healthier cheese to make it even lower in fat. Enjoy!
