Quick tea tonight so made up a easy, cheap and healthy recipe for me and my sister. The recipe serves 3 people so I kept the leftovers for lunch tomorrow.

Ingredients:
2 salmon fillets
250 grams wholewheat fusili pasta
1 cup broccoli
1/2 tin peas
2 tbsp fage total greek yoghurt
1 tbsp aldi soft cheese
1 tsp dried parsley
1 tsp dried mixed herbs
2 tsp lemin juice
1 tsp grated lemon zest
40grams grated cheese
Black pepper

Directions:

Wrap salmon fillets in foil and place in a preheated oven at 200°c for 20minutes until cooked. Place pasta in boiling water and boil untill cooked. Boil broccoli and peas also in a separate pan untill cooked.

In a separate pan, add your greek yoghurt, soft cheese, parsley, mixed herbs and lemon juice and zest and mix untill fairly smooth and warmed through.

Once pasta, vegetables and salmon are cooked add ingredients to one pan and stir the sauce on top.

Add a little grated cheese ontop and some black pepper to taste. Voila!

I popped my recipe into My fitness pal and it came out around 527 calories per portion and 30g of protein. So a good all round dish.
