Hi all! Hope you’re doing well. We have had an eventful weekend already and it has only just begun but recently I have had such a sweet tooth so decided to make some “healthier” muffins. After looking through Pinterest I found a recipe where I could adapt most of the ingredients to what I had in my cupboard. Sometimes the best recipes are when you just throw everything in together and hope for the best! They turned out pretty good, quite rich with the dark choc but they definitely hit that chocolate craving spot. I popped my recipe into My Fitness Pal app to work out the calories etc and they came out at around 97 kcals each! Not bad for a choccie snack…just make sure you don’t eat too many!
Here is my recipe:
Ingredients:
1 3/4 cup wholegrain oats (I used Quaker’s wholegrain rolled oats)
4 egg whites
3 tsp baking powder
1 tsp vanilla extract
6 squares of dark chocolate ( I used Lindt 85%% cocoa dark chocolate)
2 tsp apple cider vinegar
3 tbl apple sauce
3/4 cup greek yoghurt (I used fage’s total 0% fat free greek yoghurt)
3/4 cup unsweetened cocoa powder (I used Hershey’s unsweetened cocoa)
4 tsp sweetener (I used Truvia)
1 cup warm water
Directions:
Mix all ingredients except for the chocolate into a blender and mix till a smooth paste. Break up around 4 squares of the dark chocolate and fold into the mix and add to muffin tins. Fill each muffin tin 3/4 way full and bake in a 180 degree centigrade pre heated oven for around 20mins. Take out and break up the last 2 pieces of dark chocolate and crumble on top of each muffin. Place back in the oven for a few minutes. Leave to cool. Mine did take a little longer to bake so check before you add the last choc chips to be sure they are cooked through.

Wow, I’m going to being having a go at these. My 11yr old is diabetic but this looks like a not to bad treat for him as no added sugar. X
