I’ve had such a sweet tooth lately so i decided to bake some protein cookies. They’re really quick and easy to make and are a great snack or on the go healthy breakfast.
I got the main recipe from one of my fave websites tone it up and added a few ingredients myself.
Ingredients:
• rolled oats ( i used quaker 100% wholegrain rolles oats)
• 2 x ripe bananas
• a scoop of protein powder ( i only had strawberry but any flavour is fine)
You may need a little almond milk or skimmed milk if too thick depending on the ripeness of your bananas. I also added a bit of cinnamon and some dried goji berries. You could add anything you like, choc chips, raisins, blueberries, carob nibs etc.
Instructions:
Mash the 2 bananas pretty well with either a fork or a potato masher.
Then add your protein powder, mix and add oats. If consistently is too thick add a little milk.
Add your choice of additions (goji berries and cinnamon) and mix. Place evenly onto a sheet of greaseproof paper. I made about 5 cookies out of this batch.
Bake in the oven at 200°c for 15 to 20 mins until theyre not gooey and you can pick them up like a normal cookie. I baked mine a little too long as it was macie’s bedtime so i wasnt concentrating but they still taste good!
